Cinco de Mayo Snacks & Cocktails

Mexican food is my favorite; I could eat it all day every day and never get tired of it. So, naturally, Cinco de Mayo is also my favorite! We'll be celebrating all week with frozen Mexican mules and onion-less salsa (Ned hates onions!).

 

 

FROZEN MEXICAN MULE: Serves 1

1 can Goslings Ginger Beer 

1-2 tsp Rose's Sweetened Lime Juice

1.5 oz tequila 

Ice 

 

Combine all ingredients with ice and blend until mixed. Garnish with jalapeños or lime and enjoy! 

 

 

 

SALSA: 

1 lb fresh tomatoes 

2 tsp jalapeños, roughly chopped

2 tsp cilantro

1 tsp onion powder 

1 tsp minced garlic 

2 tsp lime juice 

1 tsp kosher salt

 

Combine all ingredients in blender and pulse until it reaches desired consistency. Refrigerate in airtight container for 5-7 days.
